Eat local, treat yourself! We met with André Sanche, owner and chef at Ciboulette et Cie, to talk about local food.
What does it mean exactly, eating local?

Il s’agit d’une entrevue réalisée avec ANDRÉ SANCHE, chef propriétaire de Ciboulette et cie, qui nous explique comment manger local. L’entrevue est entrecoupée d’images montrant les produits locaux qu’il vend dans son restaurant.
Manger local, c’est de pouvoir
manger aussi proche
de chez soi que possible.
C’est faire un effort conscient
de choisir, quand on le peut, un
produit qui vient de chez nous.
C’est d’aller chez un épicier et
de choisir un miel qui vient
de la région plus qu’un miel qui
vient d’une autre province,
disons. C’est ces petits
choix-là qui font la différence.
On ne peut pas toujours manger
local, on veut pas tout manger
local, les bananes, on n’en a
pas dans la région, alors on
achète des bananes. Mais quand
on peut faire un choix de...
Est-ce qu’on mange des fraises
en plein cœur de l’hiver? Non,
on fait le choix de manger les
fraises pendant huit semaines
à l’été, quand elles sont
fraîches, quand elles viennent
d’ici, à 10 kilomètres.
Puis c’est juste être conscient
de ce qu’on consomme. On aide à
supporter nos voisins et,
entre temps, mes voisins vont me
supporter, parce qu’on fait
cet effort-là. Ça aide aussi
l’économie, je veux dire...
C’est mes voisins qui viennent
dépenser leur argent ici.
Eux, ils achètent des cafés, ils
achètent leur souper. Nous, on
prend cet argent-là et on
retourne ça chez eux. Donc,
c’est un cycle. C’est ce
support-là, ce cycle-là où
l’argent reste dans la région.
Et dans une petite
communauté, c’est normal.
On a toujours mangé comme ça, on
a toujours fait cet effort et on
achetait tout le temps notre
sirop d’érable chez le voisin,
parce que pourquoi acheter ça
dans les épiceries quand on peut
acheter ça chez le voisin, qui
fait le produit. Et c’est
pas conscient. On le fait depuis
tout le temps. Alors, c’est
vraiment de pouvoir
amener ça à la table.
Les gens disent: "Oh, oui! C’est
bon." C’est juste de faire
mention et de dire: "Bien là, on
mange local." Et les gens font:
"Ah... Ah oui! C’est vrai, j’ai
toujours mangé local."
C’est normal, pour nous.
Le local, c’est accessible.
C’est pas aussi difficile que ça
de le trouver. Ça veut pas
nécessairement dire plus cher.
Ça prend juste un effort
conscient, souvent, de faire ces
choix-là et de savoir quelle
différence on fait
dans notre communauté.
