Il s’agit d’une entrevue réalisée avec FRANÇOIS PROULX, de la ferme Proulx et Érablière. L’entrevue est entrecoupée d’images du temps des sucres: de la récolte de la sève jusqu’à la dégustation de la tire sur neige.
L’érable à sucre, c’est
vraiment un arbre unique.
C’est quasiment comme
dans une région de vin,
chaque érable, chaque endroit
produit un sirop différemment.
Et pour nous, les
érables, c’est précieux.
Et ici à la ferme, les érables
ont tout près de 150 à 200 ans
et c’est entaillé depuis le
début du siècle. On peut
seulement entailler un arbre de
minimum 60 ans. Fait que ça
prend énormément avant qu’on
puisse avoir un bel arbre pour
faire l’entaillement des arbres.
Quand j’ai grandi, il y avait
des arbres ici qui étaient tout
petits, mais maintenant qui
sont prêts à entailler.
La cabane à sucre a été bâtie
par mon grand-père et on l’a
gardée vraiment typique. C’est
la cabane à sucre de l’époque.
La génération qui s’en vient
après nous autres, ça va
être vraiment la quatrième
génération. Fait que
ça reste dans la famille.
Il faut vraiment avoir un amour
pour faire le sirop d’érable,
parce qu’il n’y a vraiment pas
d’argent au bout de la ligne.
Pendant le temps que tu comptes
tous tes équipements. Et il faut
vraiment que tu aimes ça.
C’est des grandes journées
et du travail très dur.
